- 1 c. sugar
- 4 Tbsp. flour
- 1 egg, beaten
- 3 egg yolks
- 2 c. buttermilk
- 1 Tbsp. butter
- 1 Tbsp. lemon extract
- 1 tsp. vanilla
- pastry shell
- 1/3 c. sugar
- 3 egg whites
Directions

1Sift together sugar and flour. Add one egg well beaten with the yolks of 3 eggs.

2Add fresh cultured buttermilk.

3Stir and cook until thick and creamy. Remove from fire. Add butter and lemon extract.

4Let cool slightly and pour into a baked pastry shell. Cover with meringue.

5Spread smoothly upon the pie.

6Bake 15 minutes at 350°.
