- 2 c. buttermilk
- 1 Tbsp. butter
- 3 eggs
- 1 1/2 c. sugar
- 2 Tbsp. flour (heaping)
- lemon extract to taste
Directions

1Heat buttermilk and butter in top of double boiler.

2Mix flour, sugar and beaten eggs (yolks only).

3Stir hot buttermilk into mixture and return to stove and cook until thickened.

4Pour into raw crust and bake until crust is done and filling firm. Cover with egg white meringue and brown in oven.

5This is a delicious cream pie made often by my paternal grandmother who died in August 1941 at the age of 91.

6She used buttermilk from home churned butter.
