  • 3 eggs
  • 1 1/2 c. sugar
  • 1 Tbsp. cornstarch
  • 1 stick butter
  • 1/2 c. buttermilk
  • 1 tsp. vanilla
  • lemon rind
  • unbaked pie shell

Directions

    Slightly beat 3 whole eggs. Combine with sugar, blended with cornstarch. Melt butter. Add butter, buttermilk and vanilla. Add a little grated lemon rind. Pour filling into uncooked pie shell. Preheat oven to 400° and then turn oven down to 325°. Bake from 40 to 60 minutes, until filling is set.
