Butternut Squash

  • 1 butternut squash, halved and seeded
  • 3 Tbsp. butter
  • fresh rosemary and thyme
  • grated nutmeg
  • salt and pepper
  • honey

Directions

    Place squash, cut side up, in shallow roasting pan. Place 1 tablespoon butter in each half. Place seasonings on each half. Cover pan with aluminum foil and roast 1 1/2 hours at 350°. Remove herbs, spoon squash into a bowl and mash until very smooth. In a saucepan, add honey and remaining butter; add seasonings and warm through before serving.
