Butternut Squash Pie

  • 4 well beaten egg yolks
  • 1/2 tsp. salt
  • 2 1/4 c. granulated sugar
  • 5 Tbsp. flour
  • 2 c. mashed butternut squash, cooled
  • 3 c. sweet milk
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 3 Tbsp. butter or margarine

Directions

    Combine ingredients in order listed.

    Mix thoroughly, then add stiffly beaten egg whites.

    Pour into unbaked pie shells and bake 10 minutes at 400° then for 40 minutes at 350°.

    Makes 3 medium size pies.
