Butternut Squash Pie

  • 1 large butternut
  • 2 egg yolks
  • 2 Tbsp. flour
  • 3/4 c. sugar (or to taste)
  • 1 tsp. vanilla
  • 3/4 stick butter
  • 1/2 tsp. apple pie spice (optional)

Directions

    Cook squash until done; drain.

    Add butter, then mash until smooth.

    Add other ingredients. Pour into pie shell and bake until crust is done at 350°.

    Add meringue and bake until brown.
