Butternut Squash With Sage

  • 4 tbsp oil
  • 24 None fresh sage leaves, 8 leaves chopped, remainder left whole
  • 1 None butternut squash (around 3 lbs), peeled, deseeded and cut into wedges

    Heat oil in a large frying pan and fry whole sage leaves until crispy. Drain on paper towels. Add squash and chopped sage to pan and saute over medium heat for 5-10 mins, until soft. Serve garnished with fried sage leaves.
