Butterscotch Dumplings

  • 1 cup self-rising flour + 2 tbsp
  • 4 tbsp butter, chopped
  • 1 tbsp honey
  • None None ice cream, to serve
  • None None Butterscotch Sauce
  • 3/4 cup brown sugar
  • 2 1/2 tbsp butter
  • 2 tbsp honey

    Preheat oven to 350°F. Lightly grease a shallow baking dish.

    Sift flour into a large bowl. Cut in butter until mixture resembles breadcrumbs. Add 2 tbsp water and honey and mix until combined. Shape into 8 dumplings then transfer to prepared dish.

    To make the butterscotch sauce, combine all ingredients with 1/2 cup water. Stir over low heat until sugar dissolves. Bring to a boil then remove from heat.

    Pour butterscotch sauce over dumplings and bake for 20 mins. Baste with sauce and cook for another 10 mins, until dumplings are golden. Serve with ice cream.
