- 1 (9-inch) pie crust, baked
- 3/4 c. granulated brown sugar substitute
- 2 Tbsp. flour
- 1 c. cold skim milk
- 2 eggs, separated
- 2 Tbsp. margarine
- 1 tsp. vanilla
- dash of salt
- 2 tsp. granulated sugar substitute
Directions

1Combine brown sugar substitute, flour, milk, egg yolks, margarine, vanilla and salt.

2Cook over medium heat until mixture comes to a rolling boil, stirring constantly.

3Pour pudding into baked pie crust.

4Whip egg whites until soft peaks form; add sugar substitute and whip until thick and stiff.

5Spread on top of pudding, sealing edges.

6Bake at 350° until lightly browned, about 12 to 15 minutes.
