- 1 c. chopped onions
- 2 c. chopped celery
- 2 Tbsp. butter or oleo
- 1 (4 oz.) can sliced mushrooms, drained
- 1 (2 oz.) jar chopped pimento
- 3 c. cooked chicken
- 3 c. cooked rice, prepared in chicken broth
- 3/4 c. chicken broth
- 1 (10 3/4 oz.) can condensed cream of mushroom soup
- salt and pepper
- 2 c. grated cheese
Directions

1Cook onions and celery in butter until tender, but not brown. Stir in mushrooms, pimentos, chicken and cooked rice.

2Blend broth and soup.

3Stir into chicken mixture.

4Add salt and pepper to taste.

5Turn into a greased 8 x 12 x 2-inch baking dish.

6Sprinkle with cheese.

7Bake at 350° for 30 minutes or until hot and bubbly. Yields 6 to 8 servings.
