- 2 pkg. active dry yeast
- 3/4 c. warm water
- 1 1/4 c. buttermilk
- 4 1/2 to 5 c. flour (if using self-rising omit baking powder and salt)
- 1/4 c. shortening
- 2 Tbsp. baking powder
- 2 tsp. salt
- soft butter
Directions

1Grease 9 x 5 x 3-inch loaf pan.

2Dissolve yeast in warm water in large mixing bowl.

3Add buttermilk, 2 1/2 cups flour, shortening, sugar, baking powder and salt.

4Blend 30 seconds on low speed.

5Beat 2 minutes on medium speed, stirring in remaining flour.

6Knead 5 minutes or about 200 strokes on generously floured board.

7Roll dough to 18 x 9-inch rectangle.

8With side of hand, press each end to seal.

9Fold ends under loaf.

10Place seam side down in pan.

11Brush lightly with butter.

12Let rise in warm place (85°) for 1 hour.

13(Dough in center should come about 2-inches above pan.)

14Preheat oven to 325° and place oven rack in lowest position.

15Bake 30 to 35 minutes.

16Remove from pan and brush with butter.
