Ingredients

  • 1 1/2 c. dried white beans
  • 1 (12 oz.) smoked ham hock
  • 3 to 5 cloves garlic, crushed
  • 1 medium onion, chopped
  • 1 tsp. dried rosemary
  • 3 carrots (1/2-inch thick), sliced
  • 1/2 green cabbage, shredded (4 c.)
  • 1 tsp. salt
  • 3/4 tsp. pepper

    Rinse beans.

    Place in large saucepot in cold water to cover. Soak 6 hours.

    Drain.

    In same pot, combine beans, ham hock, garlic, onion, rosemary and 8 cups of water.

    Bring to boil. Cover, reduce heat and simmer for 1 hour.

    Add remaining ingredients and simmer 1 more hour.
