Ingredients
- 6 c. chicken broth
- 1 c. canned tomatoes with liquid
- 1 1/2 c. cabbage, shredded
- 3/4 c. celery, sliced thin
- 3/4 c. carrots, shredded
- 3/4 c. onion, sliced thin
- 2 tsp. sugar
- 1 1/2 c. julienne raw beets
- salt and pepper
- 2 tsp. red wine vinegar
- 1/4 c. chopped fresh dill
- sour cream (optional)
Directions

1Combine broth, tomatoes, cabbage, celery, carrots and onions in sauce pot.

2Bring to a boil.

3Reduce heat, cover and simmer until vegetables are tender, 20 to 30 minutes.

4Stir in sugar and beets.

5Simmer, covered, 15 to 20 minutes. Season with salt and pepper.

6Ladle into bowls.

7Top with fresh dill and sour cream, if desired.

8Makes 9 cups.
