Cabbage Casserole

  • 1 small cabbage, shredded
  • 1/4 c. mayonnaise
  • 1 can cream of chicken soup
  • 1 to 1 1/2 c. shredded Cheddar cheese
  • salt and pepper to taste
  • 1 medium onion, chopped
  • 1 stick butter or margarine, melted
  • 1 sleeve Ritz crackers, crushed

    Cook cabbage and onion until tender and drain water. Place cooked cabbage in casserole dish sprayed with Pam. In a bowl, mix soup, mayonnaise and salt and pepper. Pour over cabbage. In another bowl, mix crushed Ritz crackers, butter and cheese. Spread over cabbage and soup mixture. Bake at 350° for 30 to 40 minutes or until golden brown. Do not overbake or cheese gets too brown.
