Cabbage Salad

Ingredients

  • 1 lb. cabbage, chopped or 1 pkg.
  • 1/2 c. vinegar
  • 1/2 c. water
  • 1 c. sugar
  • 1 tsp. mustard seed
  • 3 stalks celery, chopped fine
  • 1/2 jar pimento (for color)
  • 1 bell pepper, chopped fine

Directions

    Soak cabbage in ice water for 2 hours to make crisp; drain. Mix vinegar, water and sugar until sugar is dissolved.

    Mix all ingredients and chill.

    Drain to serve.

    Make a couple of days ahead for better flavor.
