Cabbage Soup

Ingredients

  • 2 c. celery, cut up (including green tops)
  • 1 1/2 Tbsp. dried onion flakes
  • 2 qt. water
  • 4 c. cabbage, shredded
  • 2 Tbsp. lemon juice
  • 2 Tbsp. liquid sugar substitute
  • 2 c. diced tomatoes
  • 6 peppercorns
  • 2 envelopes powdered chicken broth
  • 2 Tbsp. salt or to taste

Directions

    Cook celery and onion in water. Mash them through a strainer, extracting all juices. Add juices to cabbage and lemon juice. Cook for 1 hour. Stir in sugar substitute, tomatoes, peppercorns and chicken broth.

    Cook 1 hour longer.

    Season with salt.
