  • 1 tsp butter
  • 1/4 cup onion, finely diced
  • 1 1/2 cups potatoes, peeled and chopped
  • 1 1/2 cups carrots, peeled and chopped
  • 3/4 cup celery, roughly chopped
  • 2 3/4 cup green cabbage, roughly chopped
  • 1 None bay leaf
  • 1 2/3 cup vegetable stock
  • None None chopped chives, for garnish

Directions

    Melt butter in a saucepan and saute the onion. Add the prepared vegetables, bay leaf and season with salt and pepper.

    Pour in the stock, cover and simmer for 20 minutes. Serve with a sprinkle of chopped chives.
