- 1 tsp butter
- 1/4 cup onion, finely diced
- 1 1/2 cups potatoes, peeled and chopped
- 1 1/2 cups carrots, peeled and chopped
- 3/4 cup celery, roughly chopped
- 2 3/4 cup green cabbage, roughly chopped
- 1 None bay leaf
- 1 2/3 cup vegetable stock
- None None chopped chives, for garnish
Directions

1Melt butter in a saucepan and saute the onion. Add the prepared vegetables, bay leaf and season with salt and pepper.

2Pour in the stock, cover and simmer for 20 minutes. Serve with a sprinkle of chopped chives.
