- 1 teaspoon butter
- 1/4 cup onion finely diced
- 1 1/2 cups potatoes peeled and chopped
- 1 1/2 cups carrots peeled and chopped
- 3/4 cup celery roughly chopped
- 2 3/4 cups green cabbage roughly chopped
- 1 bay leaf
- 1 2/3 cups vegetable stock
- chives chopped, for garnish
Directions

1Melt butter in a saucepan and saute the onion. Add the prepared vegetables, bay leaf and season with salt and pepper.

2Pour in the stock, cover and simmer for 20 minutes. Serve with a sprinkle of chopped chives.
