  • 1 whole Lime, Juiced
  • 1 Tablespoon Mayonnaise (light Works Great, Too)
  • 1 teaspoon Cayenne Pepper
  • 1/4 cups Shredded Cheese
  • 1 pinch Salt And Pepper, to taste

    Open and drain the corn.

    Put it into a serving bowl.

    Mix in the lime juice, mayonnaise, cayenne pepper and shredded cheese.

    Add some salt and pepper, to taste.

    If you want some additional kick, add some hot peppers!
