- 1 lb. fresh cactus leaves, dethorned, cut into 1-inch cubes
- 2 Tbsp. KRAFT Lite House Italian Dressing
- 1/2 cup finely chopped onion King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, minced
- 8 eggs
- 1/4 cup milk
- 1 cup KRAFT 2% Milk Shredded Mild Cheddar Cheese, divided
- 2 cups salsa
Directions

1Boil the cactus in salted water for 15 minutes or until tender; drain.

2Heat dressing in large ovenproof nonstick skillet on medium heat.

3Add onion and garlic; cook and stir 3 minutes.

4Remove from heat.

5Stir in cactus.

6Beat eggs and milk with wire whisk until well blended.

7Stir in 1/2 of the cheese.

8Pour over cactus mixture in skillet.

9Bake at 350 degrees F for 20 minutes or until center is set.

10Sprinkle with remaining cheese; continue baking 5 minutes or until cheese is melted.

11Cut frittata into 8 wedges.

12Spoon 1/4 cup salsa onto each serving plate; top with frittata wedge.
