Caesar Pasta Salad

  • 8 oz. fusilli
  • 1 c. broccoli flowerets, blanched
  • 1 c. cauliflower flowerets, blanched
  • 1/2 c. diced cucumbers (1/2-inch)
  • 1/2 c. diced red bell pepper (1/2-inch)
  • 1 c. creamy Caesar salad dressing
  • 1/3 c. grated Parmesan cheese
  • 1/2 c. diced tomato
  • 1/2 lemon juiced
  • fresh parsley, chopped

Directions

    Cook pasta according to package directions.

    Drain and cool. Add broccoli, cauliflower, cucumber, tomato and red pepper.

    Toss salad with Caesar salad dressing and Parmesan cheese.

    Chill.

    To serve, squeeze lemon juice over salad; garnish with fresh parsley. Serves 4 to 6.
