- 1 clove garlic
- 3/4 c. olive oil or salad oil
- 2 c. croutons (from French bread)
- 2 large heads romaine lettuce
- 1/2 tsp. salt
- freshly ground pepper, to taste
- 1 egg
- 1/4 tsp. Worcestershire sauce
- 1/2 c. grated Parmesan cheese
Directions

1Crush the garlic.

2Add it to the oil and let stand several hours.

3Boil the egg just enough so that the egg white has turned white and the yolk is still runny (about 1 minute).

4Immediately remove from boiling water, break it and beat slightly.

5Cut the croutons and brown them in 1/4 cup of the garlic and oil.

6Tear the romaine into bite-size pieces and place in salad bowl. Sprinkle with salt and pepper.

7Break the egg over the salad and toss.
