Ingredients

  • 1 clove garlic
  • 3/4 c. olive oil or salad oil
  • 2 c. croutons (from French bread)
  • 2 large heads romaine lettuce
  • 1/2 tsp. salt
  • freshly ground pepper, to taste
  • 1 egg
  • 1/4 tsp. Worcestershire sauce
  • 1/2 c. grated Parmesan cheese

Directions

    Crush the garlic.

    Add it to the oil and let stand several hours.

    Boil the egg just enough so that the egg white has turned white and the yolk is still runny (about 1 minute).

    Immediately remove from boiling water, break it and beat slightly.

    Cut the croutons and brown them in 1/4 cup of the garlic and oil.

    Tear the romaine into bite-size pieces and place in salad bowl. Sprinkle with salt and pepper.

    Break the egg over the salad and toss.
