Ingredients

  • 2 cloves garlic, halved
  • 1/2 c. olive oil
  • 2 c. soft bread cubes
  • 1 or 2 heads romaine lettuce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 hard-cooked egg
  • 1/4 c. lemon juice
  • 1/4 c. grated Parmesan cheese
  • anchovy fillets or 1 Tbsp. anchovy paste

    Marinate garlic in olive oil for 30 minutes.

    Hard-cook eggs for 7 minutes; cool and remove shell.

    Remove garlic from the olive oil and set aside.

    Using 2 tablespoons of the olive oil, brown bread cubes in large skillet over medium heat.

    Set aside. Put all remaining ingredients (olive oil, garlic, egg, lemon juice, salt, pepper, anchovies and cheese), except lettuce, in food processor or blender and mix well.

    Put lettuce that has been washed, dried and torn into bite sized pieces, in a large bowl. Add mixture from blender and toss.

    Add bread cubes and toss again.
