  • 1/4 cup (1 ounce) preshredded fresh Parmesan cheese
  • 1/4 cup low-fat buttermilk
  • 2 teaspoons lemon juice
  • 1 1/2 teaspoons anchovy paste
  • 1/4 teaspoon Worcestershire sauce
  • 1/8 teaspoon pepper
  • 1 garlic clove
  • 1/3 cup plain fat-free yogurt
  • 2 (10-ounce) bags romaine salad or 12 cups sliced romaine lettuce
  • 1 cup fat-free garlic-and-onion croutons
  • 2 tablespoons (1/2 ounce) preshredded fresh Parmesan cheese

Directions

    Combine first 7 ingredients in a blender; process until smooth. Pour into a bowl; stir in yogurt. Combine lettuce and croutons in a large bowl. Drizzle yogurt mixture over salad; toss gently to coat. Spoon salad into six individual bowls; sprinkle each with 1 teaspoon cheese.
