- 2 heads romaine lettuce
- 3 cloves garlic
- 1/2 tsp. capers, rinsed
- 6 anchovy fillets
- 2 egg yolks
- 1/4 tsp. dry mustard
- 2 Tbsp. lemon juice
- 1 tsp. coarse black pepper
- 1/2 c. olive oil
- 1/2 c. Parmesan cheese
- croutons
Directions

1Tear romaine into 2-inch pieces; wash, dry and refrigerate. Combine in processor garlic, capers, anchovies, egg yolks, dry mustard, lemon juice and 1/2 teaspoon pepper.

2Add olive oil and process until dressing is like mayonnaise.

3Refrigerate 30 minutes.

4Place romaine in bowl with 1/2 teaspoon pepper.

5Pour dressing down the sides of the bowl, lifting the lettuce to coat leaves evenly.

6Add croutons and Parmesan cheese and serve.
