- 6 small catfish, cleaned and dressed
- 1 tsp. salt (optional)
- 1/4 tsp. fresh black pepper
- 1 (2 oz.) bottle hot sauce
- 1/4 tsp. salt and pepper
- 2 c. cornmeal (self-rising)
- olive oil
Directions

1Combine salt, pepper and hot sauce to create marinade.

2Season catfish with salt and pepper to taste and marinate for 2 hours in refrigerator.

3Put cornmeal into paper bag.

4Drop catfish in bag, one at a time, and shake bag until fish are completely coated. Fry fish in deep, hot olive oil (375°) until fish floats to surface and are golden brown.

5Drain on paper towels and serve hot.

6Serves 4.
