- 2 tablespoons extra virgin olive oil
- 1 tablespoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt, less if that's your preference
- 1/4 teaspoon cayenne
- 4 catfish fillets (about 1 1/2 pounds)

1Preheat broiler.

2Line pan with foil for easy clean up.

3Combine oil, paprika, oregano, salt and cayenne pepper in a small bowl.

4Place catfish on foil-lined pan and brush both sides with spice mixture. Arrange catfish, flat side up, for initial cooking.

5Broil about 10 minutes (until catfish reaches an internal temperature of 145 degrees F), carefully turning fillets once halfway through cooking. Don't overcook!
