- 6 to 8 chicken breasts
- 1 large can tomatoes
- 1 bell pepper, sliced
- 1 medium onion, sliced
- 1 c. celery, chopped
- 3 Tbsp. oil
- 3 1/2 c. rice
- 1 bay leaf
- 1 Tbsp. hot sauce
- 1 Tbsp. salt
- 1/2 tsp. black pepper
Directions

1Batter and fry chicken as normal.

2Remove from frying pan. Add oil.

3Add pepper and onion (slice the same so they will cook evenly).

4Stir until onion and pepper are done.

5Add tomatoes, hot sauce, salt, black pepper and bay leaf.

6Cook on low heat until boiling.

7Add chicken.

8Cook until thick.

9Serve over rice.
