Cajun Deep-Fried Turkey

Ingredients
- 3 Tbsp. clarified butter *
- 3 Tbsp. onion paste **
- 1 Tbsp. each: dry mustard, granulated garlic, thyme, paprika and cayenne pepper
- 1 1/2 c. chicken stock
- 1 (10 to 15 lb.) turkey (unbasted)
- 3 gal. peanut oil
Directions

1Combine butter, onion paste, mustard, garlic, thyme, paprika, cayenne and chicken stock.

2Using a syringe, inject mixture into turkey in many areas and depths.

3Marinate 1 to 24 hours in refrigerator.

4Heat oil to 375°.

5Lower turkey into hot oil.

6Cook about 3 minutes per pound.

7Drain bird of excess oil.

8Wrap in plain parchment paper or paper bags to hold the heat.

9Place inside insulated cooler and let sit 15 to 25 minutes, until internal temperature reaches 170° to 175°.

10Remove from cooler and wrapping.

11Slice.

12Makes 15 to 20 servings.
