- 3 ducks
- 3 c. rice
- 1 bell pepper, chopped
- 1 large onion, chopped
- 1 1/2 stalks celery, chopped
- 2 large cans tomatoes, diced
- 1 can Ro-Tel, diced
- 1 small jar picante sauce (mild)
- 1 1/2 tsp. cinnamon
- 1 tsp. ground sage
- 1/2 tsp. marjoram
Directions

1Boil ducks with no seasoning.

2Save broth; strip meat off bones and put aside.

3Cook rice in broth, adding water as needed. Cook separately bell pepper, onion and celery; simmer until tender.

4In large pan, cook tomatoes, Ro-Tel and picante sauce. Add cinnamon, sage, marjoram and salt and pepper to taste.

5Mix all cooked ingredients.

6Simmer on stove for 2 hours, uncovered. Serves approximately 15.
