  • 32 ounces chicken broth
  • 1 medium carrot, diced fine
  • 1 red bell pepper, seeded diced
  • 1 green bell pepper, seeded diced
  • 8 ounces frozen corn
  • 8 ounces andouille sausages, choppd fine
  • 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 1 tablespoon chipotle chile in adobo
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon fine sea salt
  • 6 large eggs

    combine all ingredients except eggs in stock pot simmer 20 minutes.

    ladle into bowls and crack an egg into each bowl.and let set for 2 minutes.
