- 3/4 pounds Rigatoni Pasta
- 1 Tablespoon Canola Oil
- 1/2 whole Yellow Pepper, Sliced Thin
- 1/2 whole Red Pepper, Sliced Thin
- 1/2 whole Yellow Onion, Sliced Thin
- 1- 1/2 cup Smoked Chicken Sausage, Sliced Into Thin Rounds
- 1 cup Fresh Broccoli Cut In Small Florets
- 2 cups Reduced-sodium Chicken Stock
- 8 ounces, weight Cream Cheese
- 2 Tablespoons Cajun Seasoning
- 1/4 teaspoons Black Pepper
- 1/4 Tablespoons Salt
- 1 cup Shredded Cheddar Cheese
- 1/2 cups Grated Parmesan Cheese
Directions

1Preheat oven to 350 F. While cooking the pasta (according to the package directions), heat a skillet with canola oil on medium high heat.

2Once the skillet is heated, add the peppers and onions and cook for about 2 minutes.

3Add the sausage and cook until everything begins to char.

4Add the broccoli and cook for about a minute.

5Remove the sausage and veggies from the pan and set aside.

6Pour the chicken stock into the pan and scrape the bottom of the pan as the stock heats up.

7Add the cream cheese block and stir until combined.

8Add the Cajun seasoning to your taste along with the salt and pepper.

9When the pasta is done, drain it.

10Toss the pasta, veggies and sausage into the sauce and mix to combine.

11Pour the mixture into a 9x13 pan that has been sprayed with cooking spray.

12Top with cheddar and Parmesan cheese, sprinkle with additional Cajun seasoning if you wish.

13Put this into a 350 F oven for about 10 minutes or until the cheese has melted.

14Top with additional Parmesan cheese and enjoy!
