- 1 lb. red beans
- 3 qt. cold water
- 4 onions, chopped
- 4 toes garlic, chopped
- 1 lb. ham trimmings with skin on
- 2 lb. smoked sausage
- salt and pepper
Directions

1Pick over beans and wash well.

2Soak overnight.

3Boil beans, onion, ham and garlic on high in a heavy pot.

4Check often so not to scorch.

5When beans are tender, add sliced sausage.

6Cook for 30 minutes.

7Add water, if necessary.

8Add salt and pepper to taste.

9Serve over steamed rice.
