Ingredients
- 1/4 c. olive oil
- 2 Tbsp. all-purpose flour
- 1 c. onion, chopped medium
- 1/2 c. bell pepper, chopped medium
- 2 Tbsp. garlic, minced
- 1/2 c. parsley flakes, double if fresh
- 1 tsp. cayenne pepper, adjust to taste
- 1/4 tsp. black pepper
- 1/2 tsp. salt
- 2 c. shrimp, cleaned and deveined
- 1/4 c. tomato paste
- 1 c. tomato sauce
- 1 c. water
Directions

1In a 10 inch skillet, heat oil.

2Add flour, stir on medium heat until flour begins to brown.

3Add onion, bell pepper, garlic, parsley, cayenne, black pepper and salt.

4Simmer on medium heat until onion is limp and clear.

5Add shrimp, cook until all shrimp are pink.

6Add tomato paste, tomato sauce and water.

7Simmer 20 minutes on low heat.

8Serve over rice.
