- 1 round steak (about 1 1/2 lb.), cubed
- 2 Tbsp. fat (shortening or bacon grease)
- 2 cloves garlic, chopped
- 1 onion, chopped
- 1/2 c. tomatoes (fresh or canned)
- 3 potatoes, cubed
- 1 small chopped green chiles (optional)
Directions

1Brown round steak in fat until it is very brown.

2Browning a long time makes a darker richer, broth.

3Add garlic, onion and tomatoes.

4Add 1 1/2 quarts water and salt to taste.

5Simmer until meat is tender, about 1 to 1 1/2 hours.

6When meat is done, add cubed potatoes.

7If desired, add chopped chiles.

8Cook until potatoes are done.

9Serve in bowls, since the Caldillo is very soupy.
