  • 5 eggs
  • 1/2 tsp. baking powder
  • 1 c. creamed small curd cottage cheese
  • 1/4 c. flour
  • 1/4 tsp. salt
  • 1/4 c. butter, melted
  • 1/2 lb. Monterey Jack cheese, shredded (2 c.)
  • 1 (4 oz.) can mild green chilies, drained

Directions

    Beat eggs until lemon colored.

    Add flour, baking powder, salt, cottage cheese, shredded Jack cheese and melted butter.

    Blend smoothly and stir in chilies.

    Pour mix into well-greased 9-inch square dish.

    Bake in 350° preheated oven 35 minutes or until top is lightly brown and center appears firm.

    Cut in squares and serve hot.

    Serve with coarsely chopped and sauteed red pepper and green onions.

    Accompany with bran muffins.
