- 5 eggs
- 1/2 tsp. baking powder
- 1 c. creamed small curd cottage cheese
- 1/4 c. flour
- 1/4 tsp. salt
- 1/4 c. butter, melted
- 1/2 lb. Monterey Jack cheese, shredded (2 c.)
- 1 (4 oz.) can mild green chilies, drained
Directions

1Beat eggs until lemon colored.

2Add flour, baking powder, salt, cottage cheese, shredded Jack cheese and melted butter.

3Blend smoothly and stir in chilies.

4Pour mix into well-greased 9-inch square dish.

5Bake in 350° preheated oven 35 minutes or until top is lightly brown and center appears firm.

6Cut in squares and serve hot.

7Serve with coarsely chopped and sauteed red pepper and green onions.

8Accompany with bran muffins.
