California Potatoes

  • 8 to 10 medium potatoes
  • 4 Tbsp. chopped scallions
  • parsley
  • 1 can cream of chicken soup
  • 1 pt. sour cream
  • 1 c. sharp Cheddar cheese, grated
  • 1 stick margarine or butter

Directions

    Boil potatoes with skins on until done.

    Set aside to cool. Peel potatoes, then grate.

    Chop scallions and add to potatoes. Sprinkle with parsley.

    In saucepan, combine chicken soup, sour cream, Cheddar cheese and stick of margarine or butter.

    Heat until butter or margarine melts.

    Pour over potatoes.

    Mix and bake at 350° for 1 hour.
