Calypso Kielbasa

Ingredients

  • 1 pound polish kielbasa sausage sliced
  • 1 whole yellow onion medium slices
  • 6 whole serrano chiles sliced
  • 1/2 x sweet yellow bell peppers medium slices
  • 1/2 x sweet red bell peppers medium slices
  • 1 whole habanero chili peppers very finely diced
  • 20 ounces pineapple chunks reserving half of juice
  • 15 ounces black beans rinsed and drained
  • 13 cup brown sugar, light more or less to taste
  • 1 tablespoon olive oil, extra-virgin
  • 1 pinch red pepper flakes
  • 1 pound egg noodles

Directions

    Heat olive oil and add red pepper flakes in a large skillet

    Brown kielbasa on both sides in olive oil, and pepper flakes

    Add peppers and onion to skillet.

    Saute until peppers sbegin to soften

    Add reserved pineapple juice and brown sugar and black beans to skillet.

    Reduce heat to simmer, and simmer for about 20 minutes.

    Add pineapple chunks.

    Cook down until you have desired sauce consistency

    Prepare egg noodles according to package directions.

    Drain

    Serve kielbasa mixture over egg noodles.
