Canadian Rum Cake

Ingredients
- 1 lb. dates, pitted
- 1 lb. walnuts
- 1/4 c. butter
- 1 1/2 c. brown sugar
- 1 tsp. baking soda
- 1 c. boiling water
- 3 eggs, beaten
- 2 1/4 c. flour
- 3/4 tsp. salt
- 1/2 c. rum or 2 Tbsp. rum flavoring
Directions

1Chop dates and walnuts.

2Set aside.

3Cream butter and sugar until well blended.

4Fold dates and walnuts into butter mixture. Add baking soda to boiling water and pour over batter.

5Add eggs and stir in the flour and salt.

6Cream until smooth.

7Add rum or rum flavoring and blend well.

8Pour into greased, 10-inch Bundt pan.

9Bake in preheated 300° oven for 1 1/2 hours.

10Cool in pan on wire rack for 10 minutes, invert onto serving plate.

11Drizzle with fondant icing if desired.
