Cannelini Bean Soup

Ingredients

  • 1 cup dried cannelini beans
  • carrot
  • onion
  • garlic
  • fresh red chillis
  • vegetable stock
  • fresh parsley

Directions

    Soak beans for 12 hours

    Pressure cook the beans for around 10 minutes (using a pressure cooker seems to cook the beans vs boiling)

    Drain the cooked beans
  4. 4
    Saute the chopped carrot, onion, garlic and red chilli.
  5. 5
    Add the cannelini beans and vegetable stock. (I cheat and use a stock cube)

    Simmer for half an hour. Stir in chopped parsley briefly before serving.
