- 16 ounces chicken fillets, cooked (500g)
- 8 ounces pineapple chunks (225 ml, reserve the juice)
- 1 medium onion, finely chopped
- 2 tablespoons soya sauce
- 1/4 teaspoon ground ginger
- 1 cup chicken stock
- 2 tablespoons cornflour, mixed with a little water (cornstarch)
Directions

1Place the cooked chicken pieces, pineapple pieces and the chopped onion into a casserole dish.

2Stir all other ingredients together in a pot until it gets a glazed look.

3Pour sauce over the chicken, onion and pineapple pieces.

4Cover and bake at around 375 degrees Fahrenheit for one to one and a half hours.
