- 1/2 cup plain breadcrumbs
- 1/4 teaspoon salt
- 1 lb medium sea scallops
- 2 tablespoons olive oil
- 2 tablespoons butter or 2 tablespoons margarine
- 1 teaspoon chopped freshly parsley
- 1/2 teaspoon minced garlic
- 1/4 cup white wine
- 2 tablespoons fresh lemon juice
Directions

1Combine breadcrumbs and salt in medium bowl, add scallops and toss to coat.

2Heat oil and butter in large skillet over high heat.

3Add parsley and garlic, cook 20 seconds.

4Add scallops and cook 4-5 minutes, turning once, until browned.

5Add wine and lemon juice, cook 1 minute more.

6For appetizers, transfer to heated scallop shells, if desired.
