Ingredients

  • 6 eggs, separated
  • 2 c. sugar
  • 4 c. flour
  • 1 box raisins
  • 1/2 c. molasses
  • 2 qt. pecans
  • 1 c. butter or oleo
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1 tsp. soda
  • 1/2 to 1 c. whiskey

    Cream butter and sugar; add eggs, molasses and whiskey.

    Sift dry ingredients.

    Reserve 1 cup to dredge fruit in.

    Add to egg mixture and fold in egg white.

    Pour in greased and floured pan (tube or loaf).

    Makes 2 large cakes.

    Bake in slow oven at 275° about 3 to 4 hours or until done.
