- 12 ounces, weight Long Pasta, Cooked, 1 Cup Salted Pasta Water Reserved
- 1 Tablespoon Olive Oil
- 3 Tablespoons Butter, Divided
- 4 cloves Garlic, Coarsely Chopped
- 3 cups Chopped Fresh Tomatoes
- 1 Tablespoon Tomato Paste
- 1 cup White Wine
- 1/2 cups Mozzarella Pearls, Or Chopped Fresh Mozzarella
- 1/4 cups Torn Fresh Basil
- Salt, Crushed Red Pepper, Pepper, And Parmesan, For Serving And Seasoning (optional)
Directions

1While the pasta is cooking, heat a large skillet to medium heat with the olive oil and 1 tablespoon of butter.

2When the butter has just melted, add the garlic and tomatoes with a sprinkle of salt and some crushed red pepperas much as you like!

3Let the tomatoes soften for 5 minutes until they are just starting to fall apart.

4Add the tomato paste, and stir for 1 minute.

5Add the wine and 1/2 cup pasta water; turn the heat up if it doesnt bubble!

6Allow sauce to simmer and reduce for 4 more minutes until the wine is half reduced.

7Right before serving, toss the sauce with the pasta, mozzarella, basil, and remaining butter.

8Toss for at least 90 seconds so the cheese can melt into the sauce.

9Taste, and season once more if youd like.

10Serve with as many toppings as you can fit on the plate, and dive in.
