Caramel Apple Pudding

- 5 large granny smith apples, peeled, cored, sliced 1cm thick
- 250 g plain flour
- 2 teaspoons baking powder
- 175 g caster sugar
- 200 ml skim milk
- 150 g unsalted butter, melted
- 2 eggs, beaten
- 200 g light muscovado sugar
- 125 ml golden syrup
- cream, to serve
Directions

1Preheat the oven to 180C Lightly butter a 2.5-litre baking dish.

2Place apples in the prepared dish.

3Sift flour and baking powder into the bowl of an electric mixer, add caster sugar, milk, butter and egg, then beat until pale.

4Spread mixture over the apples.

5Place muscovado, golden syrup and 300ml water in a saucepan.

6Stir over medium heat until sugar dissolves, then bring to the boil without stirring.

7Pour over the pudding batter, then bake for 30-35 minutes or until the top is golden.

8Serve with cream.
