- 1/3 c. sugar
- 6 eggs
- 6 Tbsp. sugar
- 2 c. milk
- 1 tsp. vanilla
Directions

1Make a hot water bath to fit a 9-inch pie pan.

2Heat water as you preheat the oven to 350°.

3In a small frying pan over moderate heat, melt the 1/3 cup sugar.

4Shake the pan instead of stirring contents.

5Once melted, the sugar will caramelize quickly.

6As soon as this happens, pour at once into a 9-inch pie pan.

7Tilt pan quickly to let the syrup flow over bottom and slightly up sides of pan.

8Use hot pads to protect hands from heat.

9If syrup hardens before you finish, set pan on moderate heat until syrup softens, then continue.
