1Place sugar in a small heavy pan and add 3 tbsp water.

2Heat gently until the sugar dissolves.

3Bring to boil and cook until the sugar becomes a deep golden colour.

4Remove from heat and carefully add the cream and lemon zest.

5Stir over a gentle heat until smooth and leave to cool.
