  • 75 g caster sugar
  • 200 ml double cream
  • 12 lemon, zest of

Directions

    Place sugar in a small heavy pan and add 3 tbsp water.

    Heat gently until the sugar dissolves.

    Bring to boil and cook until the sugar becomes a deep golden colour.

    Remove from heat and carefully add the cream and lemon zest.

    Stir over a gentle heat until smooth and leave to cool.
