Ingredients

  • 1 whole chicken (3 lb.)
  • 1 c. fresh cilantro
  • 3 Tbsp. lemon juice
  • 2 Tbsp. vegetable oil
  • 3 cloves garlic
  • 1 jalapeno pepper, seed and cut in half
  • 1 1/2 tsp. paprika
  • 1 tsp. each: ground ginger, cumin and salt
  • 1/2 tsp. turmeric

    Heat oven to 375°.

    In a blender, process all ingredients (except the chicken) until it is a smooth paste.

    Rub paste over chicken.

    Tie legs together with string and tuck wing tips under back.

    Place breast side up in a baking pan.

    Roast 1 hour.

    Let chicken stand before carving.
