Caramel Pear Pudding Cakes

  • 14 ounces pear slices in natural juice, drained
  • 3/4 cup self rising flour
  • 1/3 cup brown sugar packed
  • 2 tablespoons butter melted
  • 1/3 cup milk
  • 1/3 cup pecans chopped coarsely
  • powdered sugar for dusting

  • 3 tablespoons butter chopped

Directions

    Preheat the oven to 350°F. Grease four 1 1/4-cups baking dishes, and place them on a baking pan.

    Divide the pear slices among dishes.

    Combine the flour, brown sugar, melted butter and milk in a medium bowl and mix well. Spread evenly over the pear slices. Sprinkle with the pecans.

    For the caramel sauce, combine the brown sugar, chopped butter and 3/4 cup boiling water in a medium bowl and stir until sugar is dissolved and the butter melted. Pour the caramel sauce slowly over the back of a spoon over the mixture in the dishes.

    Bake for about 25 mins or until firm. Dust lightly with powdered sugar and serve immediately with whipped cream or ice cream, if desired.
