Caramelized Onion & Olive Pizza

  • 1 whole Pizza Crust (Thin)
  • 5 Tablespoons Extra Virgin Olive Oil
  • 4 whole Yellow Onions, Thinly Sliced
  • 4 Tablespoons Butter
  • 1/2 teaspoons Dried Rosemary
  • 1 pinch Freshly Ground Pepper, to taste
  • 1/2 cups Kalamata Olives, Pitted And Chopped
  • 8 whole Anchovies, Drained (Approximately 3-4 Ounces)
  • 10 ounces, weight Gorgonzola Cheese, Crumbled

Directions

    Preheat oven to 550F.

    Warm oil in a large heavy skillet on medium heat.

    Add onions.

    Cook for 5 minutes or until onion softens.

    Add butter and rosemary and cook over low heat for 15 minutes or until onions have caramelized.

    Add a pinch pepper and set aside to cool.

    Prepare crust on baking sheet or pizza pan according to your recipe (or package) instructions.

    Spread caramelized onions over pizza dough, leaving 1/2 inch border around the edge.

    Arrange anchovies and olives evenly on top.

    Place on bottom rack in oven and bake for 8 minutes.

    Remove from oven and sprinkle with cheese.

    Return to oven for an additional 5-6 minutes until cheese is melted and crust is golden brown.

    Remove from oven and let stand for 5 minutes.
